It’s no secret how obsessed I am with Kris Carr and I’m not the only one in this household. My girlfriend, personal chef and Founder of Erin Simone Uncooked is too! Instagram is a beautiful space to stalk yummy recipes and fortunately, Kris Carr posted one that I couldn’t wait to create! …Ok, let’s be real, I couldn’t wait for Erin Simone to make it for me! So I tagged her on Kris Carr’s IG picture
(that’s how Erin and I communicate pretty much) and the next morning, my wish came true! This smoothie is called Pumpkin Pie Spice Smoothie and it seriously tastes like there is a pumpkin pie in your cup but filled with so many nutritional ingredients that you will NOT feel guilty about. It’s such a perfect Winter drink.

Makes 2 Servings
- 1 cup pumpkin puree
- 1 banana, frozen
- 1 1/2 cups almond milk or non-dairy milk of choice (Erin Simone made homemade almond milk)
- 1/2 teaspoon pumpkin spice
- 1/2 teaspoon vanilla extract or the seeds of 1 vanilla bean, scraped
- 1 tablespoon almond butter
- 1 pitted Medjool date
