These super simple balls are a cinch to whip up! Great for unexpected company or to take with you on a long day of errands! Double the batch as they go fast!
- Food Processor
- 10 Soft Medjool Dates (they process best at room temp)
1/4 cup Hempseeds
1/2 cup Goji Berries
- 1 tsp Vanilla Extract
1/2 tsp Orange Zest
1/2 tsp Fresh Ginger
Low-Fat Shredded Unsweetened Coconut for rolling
Goji Berry Powder for Rolling (optional)
Process dates for about 20-30 seconds in food processor or until it reaches a paste-like consistency.
Add hemp seeds, goji berries, orange zest, vanilla extract, and ginger. Process for about 20 seconds until goji berries are broken down into small pieces and everything is well incorporated.
Place coconut and goji powder in 2 separate bowls for rolling. (I rolled half the balls in coconut and the other half in the powder.)
Roll about 1-inch diameter balls in the palms of your hands and roll in the desired topping. Makes about 8-10 balls. Store in the fridge and enjoy!
