Christal sits down with close friend, personal plant-based chef, and Creator of Erin Simone Uncooked to discuss healing from the inside out – How fruit, shaman and reiki saved her life – Her advice for anyone hitting rock bottom – and her everyday “go-to” picks to GLOW from the inside out.
If you’ve been following me for a while, you definitely know the name Erin Simone. She is the woman behind my kitchen and the creator of Erin Simone Uncooked. For five years, this beautiful woman has been our personal Plant-Based Chef.
I don’t know what sounds more bougie… the fact that we have a personal chef or the fact that she is a PLANT-BASED Chef, either way, you know I’m extra AF.
PS: A plant-based diet for us, just means we eat a predominately (80%) raw diet. Which are greens, veggies, and fruits. I’m not a fan of labels as I eat what my body needs and what feels good to me. Even though I do eat some meats, I think it’s important to consume in a conscious way and I also seek the help of professionals around me to make sure that what I consume caters to MY body, MY energy, and MY health.
Ok back to Erin Simone. Throughout the years, Simone (that’s what I call her) has been more than a chef to us. She is a dear friend and the person who is in the inner-workings of my life. I mean, she sees it all! Kinda hard not to when you are in someone’s personal space errrryyyyyyday!
She sees my ups. She sees my downs. BOY has she seen some downs, in fact, thank goodness I have access to her because at some of my lowest times she was there to offer the most necessary advice. Actually, because of her, I was introduced to Zen Rose Garden!
So we have her to thank for ZRG being on the platform and now, close friends of mine.
Funny how connection works right. I guess that’s why I’m in the business of relationships.
I thought it was finally time to have her on the podcast because:
1. You guys always ask about her
2. She has a lot of knowledge to drop
Simone wrote an article for us in the past about her healing journey (which was a VERY POPULAR article) but today we are going to expand on that.
I have personally seen this woman grow in every which way so I wanted her to share what took her from rock bottom and not wanting to live anymore, to stepping into her womanhood and doing what she loves every day.
She is definitely getting vulnerable and transparent in today’s session. I can guarantee, if you’ve ever felt alone with what you are going through, Erin Simone will make you feel a little less alone.
I have no doubt her message will make you feel seen, heard and understood because it was NOT easy for her. In fact, I don’t think it’s ever easy for anyone. But there’s a little fight in all of us, and the “fight” is the calling of our truth.
Our truth is always speaking to us even when we try to drown her out. But she is a fighter, and if you let your truth come through even for a short time, she will know what to do to pull you through any breakdown. Simone was definitely guided. But by what?

I’ve been listening to this episode across two days in my spare time & my goodness I intend to listen to it all over again at one time. I found myself so full of emotion listening to your story Erin & relating to it on so many levels (not just because we have the same name 🤓)
I don’t know much about energy healing but you’ve opened up my mind to the possibilities. I have been struggling for over a year now with a skin & gut health related issue, I’ve sought so much help & guidance from practitioners both natural & western sorts as well as so much research of my own. I will continue that research into energy work – I’m so interested to see if that can help me too.
